I can understand. I love lemon, but even in that bread it came out a tad strong. I'm looking at ways to tame it a bit because otherwise it's great. I jumped at it because I've had several make zucchini bread before and it's always been great.

If you need gluten-free and you can get it, you can check out the Krusteaz GF flour line or the Bob Mills GF All-Purpose Flour. Both have Xanthan Gum with all the GF flours in them, so they're a 1:1 substitution for normal flour. Pillsbury also makes a 2-lb bag also if you can't find the first 2 I mentioned.

Before you all start raising pitchforks at me, that was sarcasm. My dad has a very mild form of celiac disease and he loves baked stuff more than me. I make sure to help him out by devouring all the croissants and muffins and buns he can never have. This is for you, dad!
