Well, I can't tell you everything about your knot, but I can tell you a few things. Because it is of a single path with out beginning or end, it is a symbol of the continuum or eternity. Because it is only a single path, it is probably a fortune charm rather than a love charm. All of the crossings would represent the paths of life, fortune, romance and spirit. A knot that involved symbolizes quite a bit. I'd be interested to find out if it's a traditional design or a new concept.

I think it is a modern take by the artist/jeweler on a traditional design. The pendant itself is definitly not that old. But like u i have only found reference to it being a symbol of unity or eternity. I know that often they were more specific than that. Thanks for the info about the single strand and fortune charm....that i had not considered before.
