I'm new at writing this genre but it seems to me that there has to be some kind of graphic language in the story. Would you agree?

Not necessarily, there's an audience for everything here. Granted if you're writing a "stroker" I would think you would need it, but other wise not every story needs it.

In fact I've read a couple of short stories here where there is never a word spoken between the participants.

My question is how dirty should you talk?

Besides it's hard to enunciate with your mouth full of pussy.

As lovecraft says above, it depends greatly on what you're writing, in which category, and even on you. Generally speaking, you can get with less sex, let alone explicit sex, in a category like romance. But even romance readers like their explicit scenes, so don't decide to write, or not write, a romance on that basis.

I advise that you look around and read different stories in different genres and see what the authors do, what their readers think, things like that. You'll see the range, and also realize (I hope) that there's no rule on how to do it. If you want a graphic sex scene, then write one.
 
There's a school of thought that says the difference between romance stories and erotica is that, in a romance story, "he plunged deep with puissance and fire, uniting with her in the most primal and passionate of ways," whereas in erotica, "he shoved his cock deep into her quivering cunt."

That's an extreme oversimplification, and essentially untrue. However, it does illustrate the point that quite a few readers, at least for certain categories on Literotica, expect varying levels of raunchiness. If you're writing, for, say, the Incest/Taboo, Non-Consent, and Loving Wives categories, most of the readers there are probably going to appreciate more dicks and pussies as opposed to throbbing manhoods and simmering sugar walls. The reverse would be true for Romance, maybe Mature and Erotic Couplings as well.

Still, that's just a simplified generalization, but it's a starting point. As has been mentioned, choice of language is dictated by the story, the scene, and the characters. Is Rex Mason a bad boy on a motorcycle, taking Mary Sue out for some fun in her daddy's field? He'd probably have a throbbing cock and she a dripping pussy, then. But if he's an advertising executive and Mary is his wife, waiting at home in lingerie with a bottle of wine by the bed, then he would probably end up penetrating her gently while passion glowed in his tea-colored eyes.

Ultimately, of course, you write the story however you damn well please. The expectations of the reader, when it comes down to it, should influence you at best, but never control you.

The language of the piece should match the characters you envision. Sailors talk dirty among themselves and men can be very proper in the right company.
Talking dirty or not can shape a character. Is she a slut or a needy woman looking for her sole mate, or just a good time?

I thought you were talking about 'pillow talk'.
