slow cooker recipes?

Ok, so I've got this good idea. I work from 8 to 5 Monday through Friday... then I take my daughter to her tutoring school 4 days a week from 6:30 to 7:30.

I don't have time for 'real' cooking.. and my goal is not to eat out pretty much every night of the week like we have been. I have a slow cooker and I'm not afraid to use it. :p

Anyone wanna post some tried and true, kid friendly recipes for me to experiment with? I'm pretty much limited to bbq ribs or roasted chicken, so far. :\

Spaghetti bolognaise can be left simmering or even lower with a lid on it for hours... also improves the flavour (If you can hold off eating it for that long)
 
I have a bunch, and I swear I swear I prooooomise I'll post them later tonight and if i forget, just smack me via PM ok?
 
I cook with a slow cooker all the time. One of my favorite recipes is cooking a whole chicken in the slow cooker. The chicken goes on sale every so often and I can get two for the price of one..

1 baking or roasting chicken.

2 whole lemons

several sprigs of fresh rosemary

5 or 6 cloves of garlic

olive oil

salt and pepper

rub the chicken's cavity with a garlic clove and then lightly salt. place a few sprigs of rosemary in the cavity and pierce one of the lemons several times and place that in the cavity. Rub the chicken thoroughly with a garlic clove and place the entire chicken in the slow cooker. Drizzle lightly with olive oil. Sprinkle with chopped up rosemary and minced garlic. Cut remaining lemon in half and squeeze the juice on top of the chicken. Lightly salt and pepper.

Turn the slow cooker on low.......and go to work. You will not believe the wonderful aroma when you come home.

Silly me, you do have two daughters to consider. I would suggest stir fry, but you said you have a slow cooker, and not a wok. Sorry Licky Baby.

It's his favorite method of cooking and he's got several recipes he'll probably share with you.

The best part is walking in the door from work and smelling dinner already cooked. It's so nice.
 
Greek Chicken n' Potatoes

GREEK CHICKEN AND POTATOES


2-3 lbs chicken pieces (pick o'the chick type)
4 russet potatoes, peeled and quartered lengthwise
4-8 large garlic cloves, halved
3/4 cup canned low-salt chicken broth
1/4 cup olive oil
2/3 cup fresh lemon juice
2 teaspoons dried oregano, crumbled
1 teaspoon dried thyme, crumbled

Preheat oven to 375°F. Arrange chicken, potatoes and garlic in large roasting pan. Season with salt and pepper. Pour broth over. Whisk olive oil, lemon juice and oregano to combine. Pour evenly over chicken and potatoes.

Bake until chicken is cooked through and golden brown and potatoes are tender, basting occasionally with pan juices, about 1 hour 30 minutes (can take longer).

Serves 4.


Crock pot variation:

Double the herbs and halve the oil. Add ¼ cup lemon juice at the beginning, then one half cup about 15 minutes before serving. Cook on low 8-10 hours.
 
I know what spaghetti is, but what the heck is "bolognaise"?


That sounds yummy bluemuse.. I normally put Mrs. Salt and some seasoning salt on my chicken, but I'll give that a try :)

Bootie~baby! I do like stir-fry.. but yeah, I'd like the hard part to be taken care of when I get home ;)

Cider-Simmered Eye of Round

· 2 tsp oil
· 1 beef eye of round roast (31/2 to 4 lbs) trimmed of fat
· 2 medium-size onions, cut into eighths
· 1 stalk celery, thinly sliced
· 2 cloves garlic, minced or pressed
· 1 tsp allspice
· 1/2 tsp ginger, ground
· 1/4 tsp pepper
· 1 cup apple cider or juice
· 2 tbsp light molasses
· 2 tbsp cornstarch blended with 2 tablespoons cold water
· salt
· chopped parsley
Heat oil in a wide nonstick frying pan over medium-high heat; add beef and brown well on all sides. Meanwhile, in a 4 quart or larger electric slow cooker, combine onions, celery and garlic; sprinkle with allspice, ginger, and pepper. In a small bowl, mix cider and molasses. Place beef on top of onion mixture; pour in cider mixture. Cover and cook at low setting until beef is very tender when pierced (91/2 - 10 hrs).

Lift roast to a warm platter and keep warm. Skim and discard fat from cooking liquid, if necessary; then blend in cornstarch mixture. Increase heat to high; cover and cook, stirring 2 or 3 more times, until sauce is thickened (about 15 more minutes). Season to taste with salt.

To serve, remove and discard string from beef, then slice beef across the grain. Spoon some of the sauce over meat; sprinkle with parsley. Serve remaining sauce in a bowl or pitcher to add to taste.

Sorry, i meantioned the terrifying thing of meat. Its a rich meat sauce, mince and tomato, and other assorted items as you see fit... to be real italian, a dash of red wine too
 
Italian Chicken and Potatoes

· 2 boneless, skinless chicken breasts
· 1/2 cup Italian salad dressing
· 1 teaspoon Italian seasoning (or mix basil, oregano, crushed red pepper, and garlic powder to equal same)
· 1/2 cup grated Parmesan or Romano cheese
· 4 potatoes, peeled and cut into wedges

Place chicken in bottom of Crock Pot. Sprinkle with half of the Italian dressing, spices, and the grated cheese. Put the potatoes on top or around the chicken. Sprinkle with the rest of the dressing, spices, and cheese.

Cook on low for about 6-8 hours, or until the chicken and potatoes are tender.
 
my two favorite things to cook in the crock pot are beef stew and corned beef and cabbage.

The corned beef is easy, layer cut potatoes on the bottom, lay the corned beef on top, sliced chunks of cabbage on top of that, and carrots on top of the cabbage. Add 1/2 cup of water, and the corned beef usually comes with a seasoning package.

I don't have a recipe for the beef stew, but you pretty much do the same thing, potatoes, strew meat, carrots, any other veggie that you like in your stew, 1 cup water, a couple of tablespoons of flour or corn starch, spices to your taste.

Keep us updated on how the stuff turns out when you try them, Lickerish. I love to hear if kids like certain things or not.
 
Chicken Delicious

(wins the stupidest recipe name ever award)

5 skinless, boneless chicken breast halves
1 teaspoon fresh lemon juice
salt and pepper to taste
1/8 teaspoon celery salt
1/2 teaspoon paprika
1/2 (10.75 ounce) can condensed cream of mushroom soup
1/2 (10.75 ounce) can condensed cream of celery soup
1/4 cup dry sherry
1/4 cup grated Parmesan cheese


Rinse the chicken breasts and pat dry. Season with the lemon juice, salt, pepper, celery salt and paprika to taste. Place in a slow cooker.

In a medium size bowl mix the mushroom and celery soups with the sherry/wine. Pour mixture over the chicken breasts and sprinkle with grated Parmesan cheese.

Cook on low setting for 8 to 10 hours, OR on high setting for 4 to 5 hours
 
Lemon Tarragon Chicken with Asparagus

· 1 pound frozen chicken breasts, boneless
· 1/4 cup lemon juice
· 1/4 cup chicken stock
· 1 teaspoon tarragon (dried)
· 1 package frozen asparagus (or fresh partially cooked)
· 2 tablespoons flour
· 1/2 cup heavy or whipping cream
· salt and pepper to taste

Put frozen chicken breasts in Crock Pot and add lemon juice, broth, and tarragon. Cook on low 6 hours.

Add asparagus; whisk cream and flour together and add. Cook another hour on high or until asparagus is tender and sauce is thickened.

Serve over noodles or rice. Artichoke hearts are good in this too!

Plus a shopping list if you want to figure out what you need from the grocery store and you can have an online recipe box. All free.

Gosh, I know that Siren is a good cook and likes to cook. I now know that Nora has the recipes and is probably a good cook as well. Now I know that Licky baby has the slow cooker, and it is a long drive from my place to hers. So by the time I drive to her place dinner will be ready. I'll just bring dessert and candy for her daughters. Hmmmm??? This may work. I do need a vacation. *wink* I'm not hard to please at all. Take care of my belly, and I'll take care of you.

I love my slow cooker!!! I also have a busy lifestyle so often put something on in the morning or the evening before for the next meal. Soups are great!

Pea and Ham Soup

1 Lamb hock (or bacon bones)
1 Packet of yellow split peas.

Put in slow cooker and add enough water to cover. Cook until meat is falling off bone. Using a fork and tongs remove bone from soup. Serve with crusty bread its a meal in itself. This soup should be thick...and is always better the day after!

I have heaps more if you want them?
 
yes please :D and anything without the whole pea thing *wince* I don't mind peas in stew, and stuff like that.. but anything primarily peas makes me gag. :eek:

Lol.....I love pea and ham soup! Do you like minestrone soup..I have a great easy recipe for this.

Ok try this instead...hope you like garlic???

Garlic Beef

2.2 pounds of chuck steak (use a cheap steak for this recipe as it needs to cook for a long time)
1 Tablespoon of oloive oil
4 Cloves of garlic (crushed)
1 Onion
1/2 cup of water - 125ml
2 Beef stock cubes
2 Tablespoons worcestshire sauce
1/2 cup of cream
Parsley - fresh ir dried

Cut beef into smallish cubes. Heat oil in pan cook beef, garlic and onion in batches until browned or softened.
Put beef, garlic, onion and any juices from pan, into slow cooker with all other ingredients except cream. Cook all day (longer if you can...ie all night and day as the longer its cooked the more tender the meat is).
Add cream just before serving. I usually serve this over cooked pasta.
Its one of those dishes that everyone seems to rave over when they come for a meal as the meat just melts in your mouth.
 
Generic recipe

Most of the cooking I do is based on what's on hand so if I may, what follows is a very open ended recipe subject to taste and ingredients avaiable.....



2 pounds cubed uncooked meat
2 pounds large cut raw vegetables
1 pound whole mushrooms
2 cans of cream style or clear broth soup (undiluted)
A brief bit of appropriate seasoning
