Set up a private email account

I've had a google account forever that I use to have private conversations that I don't want coming across on my phone, or other email client. Now, when I attempt to log on to it, it wants my phone number to text me to validate the account. I'm not sure I want to do this, but there are some emails I want to get back to on there.

I'm thinking about dumping it and getting a new account with another provider. Is there one out there that is totally private and doesn't want personal information? Anyone know if I can get around Google wanting my phone number, or if its OK to provide it?

Protonmail is a good web based solution.

Even without the phone number, Google is not ideal for privacy. It has a nasty tendency to leak info that wasn't intended to be leaked.

Burner phones are very cheap.

Mail.com might do the trick.
I don't know about data security of it but it's easy to set up an account without providing a phone ID.
