Last night I started working on my newest food plaything.
6 dried Chipotle Peppers
1 sharp onion peeled
1 bulb Garlic seperated and peeled
Salt
Half a can Beer
2-3 Tablespoons Olive Oil or Bacon Grease
Water
Grated Cheese
Shredded Lettuce
Sour Cream
Tortilla's
1-1 1/2 pounds lean Pork
Set the Chipotles in a plastic or glass sealable container. Add enough water to cover along with a pinch of Salt. Cover and let sit overnight.
Cut pork into fingertip sized pieces and sprinkle with salt. Pan Fry in 1 Tablespoon Oil until browned on all sides. Dump into a smallish Crock Pot.
Split Onion in half and mince one half. Put the other half in a blender.
Mince four or five cloves Garlic. Add the rest to the Blender.
Add the minced Onion and Garlic to the fry pan with the other Tablespoon Oil. Cook until Onion is clear. While you are doing this rinse the Chipotles, cap and deseed. Add the Chipotles to the blender, cover and blend until smooth. Add this to the fry pan and heat until it starts to boil. Pour into the Crock Pot.
Add the Beer to the Crock pot and mix well. Cover and turn on low heat. Let it cook for several hours, stirring occasionally until the meat is nice and tender.
Heat your Tortilla's until they are soft and warm. Spoon some of the meat mixture into the Tortilla, add cheese, lettuce and Sour Cream. Enjoy.
This will have a nice smokey flavor with a hint of a bite at the end. The meat will be tender and tasty.
