Now this is a Christmas Dinner

Received an E-Mail from my parents this evening. They are planning Christmas Dinner around my wife and me being up there. They sent the E-Mail so I can pick up a couple of things. I'm looking forward to this meal.

To start there will be HandKasse. (Hand Cheese, a rather pungent German Cheese served with onions on bread. Most Americans can't deal with it.) As well as Pickled Herring. (I'm picking up the Herring.)

The Main meal will be Rabbit. HassenPfeffer to be exact. (Rabbit in a Cream and Pepper Sauce.) With Potatoe Dumplings and Noodles cooked in Egg. All of this will be washed down with home made Beer.

Desert will be a triple Chocolate Cake served with strong coffee.

I'm looking forward to this.

Wow, I never knew ANYONE appreciated german holiday's food. Good to hear it though. =)

Your's should be a feast. Mine? Rather simply, the goold old Christmas Duck served with a rather unhealthy sauce and of course "Knödel". =)

Still a nice treat though nothing special.


The fun part is not the food but the fact that I'll be around my newborn niece and my 2-year-old nephew. So any dinner should be delightful.

Christmas dinner is still unplanned. But on Christmas Eve, we'll be having oyster stew. That's a rule.
 
i'm not sure what the mother-in-law is making for the rest of the christmas dinner but I know that I was asked last night after our late thanksgiving dinner to make the same stuffing I made yesterday! Pretty cool as I know this year we won't have to ration the stuffing since I am making it. ;) It was a onion, celerey and bacon stuffing.

Nothing wrong with Duck.

How are you cooking it?

One thing I learned about cooking Duck is you have to not only keep it out of the grease but you have to allow it to drain. The best way I have found is to use the same rack you use for making Beer Can Chicken.
