Theoretically it should, when one becomes a zombie your base DNA chain doesn't change, but the basic brain functions would.

Oh, I heard about it last week, monday I think, and it's royally messed up the doctor decides to experiment on his wife that turned into a vampire, he drugs her up and injects things into her like pesticide, and dissects her while she's undead. She's completely conscious of it and everything.
