my problem with writing...

I think faster than I write.
I have these great ideas for stories, but when I start writing them down, I get upset because I can't write them out fast enough and I lose all desire to write becasue of that.
 
write short form sentences, that way all the ideas get down, then you can add in the rest to form proper sentences later.

Think about writing process. Try having stages where you do different things. I usually do a list of ideas or events and get them planned, then a rought draft, then a lot of revisions where I polish, tighten, fiddle with wording, etc. It's a lot faster and easier, for me, than trying to write the entire thing word-perfect in one go.

Everyone thinks faster than they write, or type. Just write. The brain works differently when you write and if you know what you're doing with the language you'll end up surprized, pleasantly often enough.

I see where you guys are coming from, but wouldn't that make more work for me?
First the basic idea, then rework it, then get it straight...
Sounds like a lot of extra stuff.

It's more steps, yes. On the other hand, each individual step it easier. And if your main problem is trying to keep up with the thoughts, it can help to have a stage where you're just throwing thoughts at the wall.

On the other hand, if your chief goal is to reduce the effort involved, I recommend aiming for shorter stories - image pieces - where there's not a lot of structuring and convolution to manage.
