Won't be at mudder's tomorrow. My father was Irish, she's of English heritage. But ya know, CB and cabbage is so fantastic, why don't we enjoy it more often. Kinda like eating turkey only on Turkey Day.

We always have it on NYD while watching the Rose Parade.

I could eat it once a month!! This summer, I will be making my own.

You used to be able to boil it four times a day.

typically, I boil the meat at a low simmer.. all day.
I don't boil the cabbage until I'm sure the meat is well done and tender. It's very important to do this in a particular order because, if the meat isn't ready, you could choke on it.

Admittedly, I will poke the meat several times during the day to see if it's ready.
 
I cook my corned beef in the slow cooker with Guinness beer. Have used a recipe for the last several years and it comes out so tender you can cut it with a fork. Won't cook it any other way anymore.

And I just said tonight, I wonder why I don't cook it more often as it is so easy and sooo good!

So much for the cake... The beer and irish cream were going to be over $30. Normally I have both in the house. I did put out a FB request for both, but we shall see...

I'm cooking mine in hard apple cider, I guess.

aww.. I'm sorry Kat. I'd send you my leftover beer if I could. I always buy the six pack and I only had to use three this year.

I hear ya on the Bailey's though. I wondered if I could talk the bar last night into allowing me to take an order in a to go cup.. lol. I knew I had some but wasn't sure it was still good.. thank goodness it was or it would have been plain cream cheese icing.

Homemade Bailey's Irish Cream

a 12 ounce can of evaporated milk
1 cup Irish Whiskey
2/3 sugar
1 T chocolate syrup
1 t vanilla extract
1/2 t instant coffee

Blend it until the sugar is dissolved. Store in a sealed container in the fridge.
