Money no object car collection

New cars now are loaded with long lists of crap I don't want. Stripping all that out to make a bare bones driving machine could be a money no object project. Maybe I would like a Mini Cooper, minus the crap.
True: one of the last quality cars built by engineers rather than electronics nerds was the BMW E39 series built from 1995 to 2004. After 2004 BMW went mad with useless Gizmos most of which are never used. Examples in good condition make very good money but if you can get one they are excellent. I got a 2003 5 series for my wife a couple of years ago, and she likes it so much it will probably outlast her. We have a big advantage here in OZ that cars do not rust much at all. Too hot, too dry, no salt.
 
I have a 4L in-line 6 in my cruiser. It does what I want it to do.
 
Jaguar F-Type probably a few years old, because the new ones only offer paddle shift, and I was a manual

I'm not much of a car guy. But if money were no object. I wouldn't go for classics, I'd go for cars with meaning to me.

Late 50s Ford pick-up: Dad and I restored one.
Ford Falcon: my Dad had one when I was young.
'67 Ford Mustang Convertible: replaced that Falcon
'68 Chevy Nova: my first car, Dad and I restored it.
'80 Ford F-150 w/Standard Transmission, I loved that truck.
 
Oh Lord, the things I would have-

1972 F100 2wd shortbox
1966 Cobra 427
1966 Galaxie 500 7 litre
the actual truck I had in high school that also carried my wife and I from prom and our wedding 1979 F150
the 1977 F150 I tried for 6 ,months to buy before I got the 79- but I already have it. And it is done.

All of the above would be immaculate. But then there would be a slightly rusty, dented and dirty, 99-2003 F150 Lariat for daily abuse.
 
After a lifetime of driving and working on my cars and cars of friends (E-type Jag, MGTD, Austin Healeys, girlfriend's 71 Mach 1 mustang, parents 67 Ford LTD 390ci), not to mention every brand of motorcycle, I'm pretty much fixed on my 2009 MINI S-type and my F150 XL 4X4. For me, more than that is too much maintenance.
