Mmmmmm...Muffins

I got some banana-chocolade-muffins in the oven right now.

My first attempt at bakery.

And the dough tatses über-delicious already. Can't wait for them to be ready. Mmmmmmmm.

I had a banana in my muffin once but it broke off and it took forever to get it out I thought I was gonna have to go to the hospitle but I was too embarassed so I just used a spoon You have to be really careful when you do that and check the spoon for sharp spots cause cuts in your muffin arent funny. I had chocolate on my muffin lots of times but thats ok it feels good and its fun to have someone lick it off.

Banana muffins are really yum, but have you ever tried raspberry ones? And they gotta be warm...Hmm, now you've made me hungry.
 
Just tasted the first one........yummy !!!!!

It could have used a little more sugar but other than that they are great.

I made about 14 small ones but since I'm the only one around here who will eat them I might share them with you guys. ;)

I wish someone could come up with a way to make muffins one by one. I'd really love a fresh baked muffin now and then, but they are only good while they are really fresh. But if decide to bake 'em, all recipies I can find are for at least a dozen of them.

Can I make muffin dough, put in in baking forms and deep freeze 'em? That way I could put one or two in the oven whnever I had the munchies, instead of only making muffins when I'm having people over, or I'll have to toss atr least half of them...

Surely you could freeze a basic muffin mix? I don't know how viable it is to cook one at a time though *chuckles*

I say bake 6....eat as many as you can stuff into yourself and not worry about any that might get left (or feed em to the dog/cat/bird/ neighbours/crocodile/whatever)
 
Liar, yes you can freeze it, but better yet. Make a small batch of muffin mix, like the ones you find in the grocery store.
Only use enough for maybe half a batch, which would be six.
Mix it up, put in a empty margerine container and put in the fridge.
This will last up to two weeks Id say.
Many times our kids have sold pre mixed batter from school fundraisers, and thats what they say is the fridge life.
Or if you pm me I have a recipe for a mix you keep on your counter. NO EGGS in it at that point.
Instead of using baking powder and soda, they use fruit in the mix to forment and make the batter rise.

Do you have a freezer? You could make 6-12 and freeze them in threes or twos, then pop one out and put it in the mikey and defrost.
