If you have a cat, let him play in the car -- even if he doesn't catch the mice, they'll move out because of the cat's scent.
If you don't have a cat (and can't borrow one for a day or so,) then a Raid Fumigator will make them stop eating the seats. Not the best option, because the dead mice will eventually start to stink and you'll have to find their little bodies.
