Juice a lemon over it...add some of one of those seasonings I sent you (did I send orange habanero?). Wrap in saran wrap for 15-30 minutes. I'd put a hunk of foil on the grill, let it heat up a bit, spray with olive oil and then put the mahi mahi on the foil.

The fish is done when the biggest part of it separates when being pulled apart with a fork

If you took one beer can of that stuff I sent you it would take 250,000 cans of beer to dilute it where you wouldn't feel any heat!
