anyone know how to make hummus from scratch? i'm looking for recipes so i can make my own (i assume it'd be cheaper that way).

well, my favorite site for recipes has a few ideas. i generally like sara moulton's recipes but i think the food network kitchen recipe is probably the most authentic. finding tahini may be tricky, though. :>

This is what I was thinking, but I live in an area where things like that are hard to come by, anyway.

I usually don't look for recipes online, but you might want to check sites that have lots of vegetarian recipes. I have vegetarian cookbooks with hummus recipes in them, but I can't vouch for them.
 
i think i may have a source for tahini... we have a supermarket that's really well stocked with these types of things (considering it's a mainstream supermarket).

i'll ck what foodnetwork has... i was hoping for something from personal experience. BAM!

Either this all here is only a big joke or your hummus is something very different from german Humus. :eek:

Hummus is a dip made with chickpeas, lemon juice, tahini, etc. It's usually served with pita bread or vegetables.

Okay, the german Humus is the black earth you get from the pile of rotten vegetables in the back of your garden that is best for plant growing.

I thought it slightly wired to ask for recipes for it... :D
 
Hehe... Not Humus - hummus. Or also, hommus, I think... If I remember right it is similar to the stuff falafel is made of... Very tasty... I wish I could find some here...

Edit: sorry took me a while to post so I didn't see the two posts above... anyway, we would also call it hummus or hommus in German, but I guess you have to live in the right area to know it... In the parts of Berlin where there are lots of Kebab and similar places it is quite common... But before I moved to Berlin I didn't know it either...

The one time I had falafel, it was not at all like hummus. However, I suppose there may be different ways to make it?

LMAO! well... there's no shortage of that mentality around here. fortunately i'm only about 30 minutes from this town that pretends to be a civilized city. it's not perfect but it works more often than not.

There are many such places here, too but I have to say I never got even near to one... :D

this is hysterical... could you imagine if that's what i was really after? lol. thank you (and munachi) for educating me on something new.

it's amazing that all these different terms can have multiple meanings... but pussy is always pussy and cock is always cock... unless you're talking about cats and chickens, of course.

homophones. that is when they sound the same and are written differently. homographs are written the same and sound differently. and homonymes can be all of the above. unless it happens to be polinymie or however that was called. which i think is the case for cock and pussy.

you should. especially the better ones, i.e. not doener-laeden, but real restaurants... oh... now i am starting to think of that really nice maroccan restaurant in kreuzberg, a huge plate and free tea for like 3 euros, lots of hummus and falafel and meat... *hungry*

Going on your past experience, wouldn`t this thread have done a lot better if you had called it "Getting Hummers" and then blamed it on a typo.
Of course there is always the possibility that you would be inundated with offers to buy used cars. :)
 
I registerd just to reply to this thread hope I don't make an ass of my self.

On the food network sight do a serch for Alton Brown he has a great recipe that uses peanut butter (I hound it much better than tahini).

To make Hummus you will need the following:

1 can of Chickpea's drain well and rinse
1 clove of garlic peeled
1/4 cup extra virgin olive oil
1 Tablespoon lemon juice
1 Tablespoon tahini (you can also sub seseame oil)
salt
Tabassco (or use ground white pepper)

place the first 2 ingredients in a Food Processor and purree, add olive oil in a thin stream until mixed in well. Remove from processor and place in a bowl and add lemon juice and tahini mix well. Season to taste with salt and Tabassco. If you like a stronger garlic flavor add a couple of extra cloves but that is an individual taste.

This is the recipe that I have used for years and have always gotten rave reviews.

This is how I make it, pretty much everything is to taste.

1 can garbanzo beans
1/3 jar tahini paste
1 or 2 cloves garlic
juice of 1 lemon
couple tablespoons olive oil
salt & white pepper

throw everything in a food processor. Then adjust the seasoning, lemon juice and garlic to taste. I like a nice lemony tang with a hint of garlic. Try to balance the ratio of garbanzos to tahini so that neither one is dominant.

Both hummus and falafel are made from chick peas. I'm getting hungry....
