Centripetal acceleration varies as v^2 / r, where v is tangential speed, and r is the radius of the Earth. Use equatorial radius, if you wish.

Short answer is, according to general relativity, the best commonly accepted theory of gravity we have, gravity is the effect of straight-line motion in curved spacetime.
