How about a few spam recipes?

Lea's Halau Style - SPAM MUSUBI

3 1/2 cup uncooked rice - steamed
1 can Spam cut into 10 slices
1/3/ cup sugar
1/3 cup shoyu (soy sauce)
1 tsp. rice vinegar
5 sheets sushi nori (seaweed)
Furikake Nori

Use either bamboo sushi mat or musubi mold
(small mold, cut nori in half - large mold, use whole nori sheet)

Fry Spam until light brown and remove from pan.
Heat sugar, shoyu and rice vinegar until sugar is dissolved then return Spam to pan, cooking for 1 minute.

Using Musubi mold:
Place nori on flat surface and center mold on top of nori
Place rice in mold and press down (rice should be 1/2" thick)
Sprinkle Furikake Nori over rice
Place seasoned Spam on rice
Add another 1/2" of rice on top of Spam and press down
Lift mold off then wrap nori around the rice
Turn musubi over placing on fold allowing the nori to seal
Slice & Enjoy!

Hey, somebody's got to have a sense of humor about this...

Coconut Beer Batter Spam with Raspberry Horseradish

2 3/4 c Flour
2 tb Oil
2 Eggs
3/4 c Cold water
2 c Beer, flat
3/4 ts Salt
Dash pepper
1 1/2 ts Garlic powder
12 oz (1 can) Spam or Spam Lite
2 c Shredded coconut


Raspberry Sauce:

1 c Raspberry sauce or jelly
3 tb Horseradish sauce


Open beer and leave at room temperature over night.

Chill beer and then add water, oil and eggs. Mix just enough to break the egg yokes. In separate bowl, mix flour, salt, pepper and garlic powder. Add to liquid ingredients, while stirring slowly. Add coconut and stir slowly.

Prepare deep fryer as directed by manufacturer. When oil is ready, dip one inch wide strips of Spam in beer batter and deep fry until they float to the surface.

To make raspberry sauce, combine raspberry syrup or jelly with horseradish sauce in small bowl.

Dip in raspberry sauce and enjoy.
 
Green Eggs and Ham à la Sam-I-Am
Ingredients

1-2 tablespoons of butter or margarine
4 slices of ham
8 eggs
2 tablespoons of milk
1-2 drops of green food coloring
1/4 teaspoon of salt
1/4 teaspoon of pepper

What You'll Need
knife, medium-size mixing bowl, wire whisk or eggbeater, large frying pan, spatula, aluminum foil, serving plates

1. With an adult's help, melt a teaspoon of butter in a large frying pan over medium heat. Add sliced ham and brown until edges are slightly crisp. Remove the ham from the pan, cover with aluminum foil, and set aside.

2. In a medium-size mixing bowl, combine the eggs, milk, salt, and pepper. Beat with a whisk until frothy. Then add 1-2 drops of green food coloring until you reach the desired shade of green.

3. With an adult's help, heat a tablespoon of butter or margarine in a large frying pan over medium heat until the butter begins to sizzle. Then add the egg mixture to the pan.

4. Stir the egg mixture with a spatula until the eggs are firm and not too runny.

5. Transfer the eggs to individual plates. Garnish with a sprig of parsley. Add the ham prepared earlier. Serve with toast or warm rolls.

Feeds 4 hungry green-egg lovers.
