There's a little more background here, which makes it sound like the woman is a few ants short of a picnic. Does not sound like any kind of insanity plea would work, but you never know.

Prosecutors say an argument over houseguests led a Southern California woman to cut off her estranged husband's penis and put it down a garbage disposal.

Sounds perfectly logical to me. I suppose it all depends on the houseguests.
