Do you remember that Gravlax recipe you gave me years back? I have a question. How do you get the peppercorns off?

I crack mine. Possibly that is a mistake?

That salt, sugar, and dill is not so much an issue, but removing the pepper corns, both for slicking and eating is kind of paramount.

I usually use whole peppers and give them a couple of good whacks on the flat side of my knife so that the peppercorns crack and release the flavor, but don’t become too small. You can also skip the peppercorns completely. Pink peppercorns are good too, those I eat.

I wonder if Sichuan pepper would be good.

I’ve never heard of Sacha. The Sichuan peppers numb and tingle, so that’s why I wondered if they’d be nice. So if Sacha does the same, they’d probably be worth trying as well.
