Okay... I really *CAN'T* give you any proportions for the herbs and spices on this, at least not accurately. This is something that I came up with at work one night. I originally used it with catfish filets, but it also works quite well with salmon. I don't measure anything, normally, I just throw things into a bowl and mix them up, then taste to see what I've got, and adjust accordingly. I'm reasonably sure that I used pretty much equal proportions of everything, so I'm going to list all of them as using 1/2 Teaspoon. That takes care of my disclaimer for the spices and herbs...

The next disclaimer is for a product that I've only *EVER* seen in restaurant kitchens. I've never been able to find it in a store, though I do live in an area where there aren't any really HUGE supermarkets. The name of the product is "Goldipt." It's distributed to restaurants by a company called Sysco. If you can't locate it in a store, you could most likely go to any restaurant that serves deep-fried clam strips - the most common use for the product - and ask them if they'd be willing to sell you a pound or two. I get it at work to use at home...

So... If you can locate some Goldipt, or a similar product, and you feel adventurous enough to experiment with the herbs and spices, this is my recipe for a Provencal salmon filet...

Provencal Salmon

INGREDIENTS:

* Two eggs
* 1/2 - 3/4 Cup light cream

1/2 Tsp. EACH of the following dried herbs and spices:

* Thyme
* Rosemary
* Marjoram
* Oregano
* Basil
* Savory
* Lavender
* Hysope
* Sage

* 1 Lb. Goldipt or similar product

* 4 Fresh salmon filets, skin removed

METHOD:

Rinse the salmon filets and pat dry, set aside. In shallow baking pan, mix together the spices and the Goldipt. In a bowl, whisk together the eggs and milk until smooth. The less cream you use, the thicker the egg wash, and the heavier the coating will be on the salmon. Dip the salmon filets one at a time in the egg wash, then coat with the herb blend. In a large, cast iron skillet over medium high heat, add about 1 to 2 Tbsp. of good olive oil, coat the bottom of the pan. Place the salmon, one pice at a time, in the pan and cook, just until brown, then turn. Make sure that all sides of the filets are browned, and set aside. Wipe the skillet, then return the filets to the pan. Place the skillet in a 425 degree oven until cooked to medium rare, or fully cooked, if that's the way you like to ruin good salmon...

I've been sick for a week and a half with a sinus infection
100 degree temp and I 've had problems swallowing
so it's all soft food right now and a new round of different meds since hte last ones didn't work :p

Okay... Chicken soup *is* the best thing for you right now, then... :)

But hey! You're in FL, right? I'll be moving to GA in the fall... Gotta get you and Gypsy and a few others up there to meet DF and I in person. We can have a real feast - I'll even cook for everyone, if someone is willing to provide some tequila for me... :p
