Maybe if the personality is right the body doesn't matter at all.

When it is all said and done I spend way more time with her personality than a traditional sex symbol body.

Ah, well, that is going to make things a bit more discouraging for her, if she's limiting herself to the pool of guys who are looking for "God's perfect match" for themselves, and if they're expecting that to be a specimen of our culturally inculcated beauty standards. Is she merely chubby, or closer to outright obese? I certainly doubt the situation is outright hopeless for her, there are bound to be ample examples in her community to hold up, of Xian husbands with chubby wives (since marriage and family is a strong goal value).
