So it's getting colder up north. (Not here unfortunately.) When I lived up there we always found some foods gave us comfort when it was cold. So what do you or did you love when it's cold out?
For me it's chili. My own special make of chili.
1 pound Venison chunked or ground. (I like to mix this half and half with Elk when I have it.)
1 large red or purple Onion, diced
1 small white/sharp Onion, diced
1 clump Garlic, peeled and minced
4 Tomatoes, chopped
1 pound Bacon cut small
6 Ancho Chili's, dried and crushed
6 Chipotle Chili's chopped small
1 can beer, the darker the better
2 cups Pinto Beans soaked, or two cans Pinto Beans
3 Bay Leaves
1/2 Teaspoon Salt
Palm Full Sugar
1/4 bottle sweet and spicy BBQ Sauce.
Brown all meats, drain and place in Crock Pot. (I like to add just a bit of the Bacon Grease but that's me.) Add the rest of the ingredients, mix well. Let simmer for at least 24 hours, stirring often. (I like to let it simmer for at least 48 hours.) Add water as needed.
