Chinese. Its a beautiful language of visual symbols. Those symbols make great tattoos as well.

That said, how is the chinese language to be written? is it up and down? and if so, will taking symbols written side by side and putting them up and down change the meaning of them?

Traditionally characters are written/read top to bottom left to right. However these days it can also be written right to left across the board like english. changing character order can change the meaning(eq. different character pairings) but most likely you'd just end up with meaningless character jumble
