Take a couple of Boneless Skinless Chicken Breasts. Trim and rinse.
Ina small bowl mix several cloves worth of finely minced Garlic, Half of a small onion, a pinch of Rosemary and enough Olive Oil to wet the entire mix. Rub the Chicken with this and let sit in the fridge for at least a couple of hours.
Roast a Bulb of Garlic, let cool and extract. Set to the side.
Grill or oven Roast the Chicken. While it is cooking start cooking some Fettuchini as well as the Sauce.
In a double boiler add one pint Cream, one cup White Wine and the Roasted Garlic. While this heats de-rind 1/4 pound Brie and cut into small pieces. When the Cream and Wine mix is hot slowly add the Brie, gently stirring until the cheese has melted.
When Fettuchini is done rinse with cold water and set to the side.
When the Chicken is done remove from heat and let cool for a couple minutes. Thin slice on an angle.
Serve up the Pasta, place the chicken on top in a nice thin layer then cover with the Cheese Sauce. Enjoy.
