You sound like a pit master!I did mine on my Traeger pellet smoker, stuffed with quartered apples (I did the stuffing in a slow cooker, basted with home made turkey stock).
It worked great. Twelve pound bird. Two hours at 190F, followed by another two hours at 350F until the temp got to 170F in the thigh. Then finished it for an hour at 190F
