It’s that time of year where you can smell winter coming, I can’t explain it, but the air smells a little different. Of course decomposing leaves colour the odours, but, know what I mean?

Cold and flu season is coming as well. Remember, if you do get sick, to drink plenty of fluids (a sparkling white wine is a good choice) and stay in bed for a few days (with a warm friend). It may not cure the cold, but it makes having it much more pleasant.

I did mine on my Traeger pellet smoker, stuffed with quartered apples (I did the stuffing in a slow cooker, basted with home made turkey stock).

It worked great. Twelve pound bird. Two hours at 190F, followed by another two hours at 350F until the temp got to 170F in the thigh. Then finished it for an hour at 190F
