I would imagine that it's probably an acquired taste as you have enough to sample to try different things for different palates.

Most of the real maple syrup that I've tried has these piney notes in it that I don't really care for. Frankly some plain old synthetic flavored Mrs Butterworth's is tasty.

This was probably a light grade because it was very blonde , not super thick, and more sweet than mapley.
 
With access to quality, I could see developing a taste for more "maple."

I imagine it's kind of like my quest to learn to appreciate beer. That has gone a little better since I quit trying to bother with mass-produced American swill. I'm now convinced that the only people who drink that stuff are alcoholics who have destroyed their taste buds.

There's a provincial collective (read 'cartel') and 'farmers' have to sell their stuff to the cartel (the Federation of Quebec Maple Syrup Producers) or face major fines. The prices paid are not all that great and there is apparently a lively syrup smuggling industry south across the 49th parallel, where prices are much better.

You can't make this stuff up.

It's a managed natural resource.

Producers have to go through the federation in order to sell syrup in a container larger than five litres.

Similar rules apply in Canada for exporting Water to regulate/prevent overselling and price collapse through bulk exports.
 
Thanks for the link. Now I know why the Mennonites horde the dark stuff for themselves. It's the only one that needs to be refrigerated or frozen. Pity, it has the best flavor. I have a couple of farms I buy from. $38 to $42 for 4 litres, right now $32. I like it because it doesn't make your insulin spike like white sugar, which is evil, imo.

The hip do not suck. Nickleback do suck. Rush are one of the best. Celine can suck it. I have seen some of the bands you've posted in the past and you sir like a lot of shitty bands.
One of the best canadian bands is still Propagandhi.
