I've done cheese a few times. Except I have a cabnit smoker with a fire box on the side. I had to detach the box, get some flexible dryer duct. Long enough so the smoke cools on its way through. It's a fucking pain in the ass! The Traeger sounds a lot easier. I really have no advice or words of wisdom, just good luck!

I had an offset smoker for years and I was perfectly happy with that. Then my dad bought the Traeger off the tv and I became a convert immediately. It's rather lovely having my weekends back instead of constantly fighting with a fire.

I have a B-I-L who has an electric smoker and his is fucking disgusting. He never really smokes in it anymore, just uses it as a low grade oven for cooking. I inspected his deck the last time I was visiting and peeked inside the greasy nasty electric smoker. I swear there was shit growing in there. When asked if I was going to stay for dinner, I told him I had a previous commitment with a old friend from college. Yes, I lied.

it's officially too hot for me out there - ran out, fed animals, burned the burnable trash along with some branches/cuttings, then back indoors for me till at least this evening. even doing the laundry, vacuuming, sweeping and general tidying in the kitchen&around the place had me sweating buckets.

right about now, i've achieved a comfortable temperature and plan on keeping it that way.
