This one is made by Beaspire. I have several Thermopro's that I like. But this one is cool'er. I think. Too early to tell.

The thing about Thermopro - I had one I used all last year and it stopped transmitting. I wrote a nasty review on the Amazon and the company contacted me and sent me a brand new one in just a few days. Hard to find customer service like that these days.

It probably wont.

From what I'm reading is it's pretty simple. Set the Traeger/pellet smoker on the lowest setting. Place cheese in a roasting pan inside a larger pan filled with ice. Smoke 1 hour, flip. Repeat.
Wrap cheese in parchment and let it mellow for 2-3 days in the fridge.

trouble with america is it's so insular! the news programmes rarely speak of things happening in other countries - it's all about america. could be why there's so much ignorance and plain disinterest in what's really happening elsewhere in the world and a sense of its own self-importance. i'd say most americans definitely believe everyone else in the world would live in america if they could! *shakes head*

I've done cheese a few times. Except I have a cabnit smoker with a fire box on the side. I had to detach the box, get some flexible dryer duct. Long enough so the smoke cools on its way through. It's a fucking pain in the ass! The Traeger sounds a lot easier. I really have no advice or words of wisdom, just good luck!
