Clyde Common in Portland was an outstanding bar, and a center of the craft cocktail movement. Jeffery Morganthaler, fresh from college, decided when he was bartender there that he had to make a splash, so he was going make a different egg nog variation every week. As I remember, this was week one or two, and it was so popular they never moved past it. If your view of egg nog is the glopulouse, thick, cloying beverage from the carton, take a shot at this one.
Clyde Commons Tequila-Sherry Egg Nog
2 large eggs
3 oz (75 grams (by weight)) baker’s sugar (super fine, not powdered)
2 oz (60 ml) añejo tequila
2½ oz (75 ml) Amontillado sherry
6 oz (180 ml) whole milk
4 oz (/120 m)l heavy cream
In a stand mixer on low speed, beat eggs until smooth. (You can also use an immersion blender)
Slowly add sugar until incorporated and dissolved.
Slowly add sherry, tequila, milk and cream.
Refrigerate overnight (optional, delicious fresh, but not as complex)
Pour into cups. Dust with fresh nutmeg before serving. Makes two servings.
Amontillado sherry drier than most. If you are using a sweeter, medium sherry, reduce the amount of sugar. I've also been known to add a bit of nutmeg and cloves into the drink itself. It makes a light, sweet drink with a subtle nutty flavor. My family, who previously hated egg nog, requests it every year now for Christmas dinner.
