Help!

I have a yummy chocolate cake mix, but no frosting... and no chocolate chips or baker's chocolate (or confectioners sugar) to make any...

any ideas?

I have milk, butter, eggs, flour, the usual... no cream cheese, unfortunately...

I once "frosted" a cake with applesause. I heated it in a saucepan, added a little cognac and sugar to it and some butter, until the applesause reduced, and used that

If you've sugar and an orange make a light orange syrup and brush over the cake.
Equal volumes of sugar and water.

If you have one of those handy peelers that pare thin strips of the rind, use that before squeeze the orange and andd the thin pieces of peel when the syrup is bubbling, few seconds only.

2 cups of sugar
1 'scant' cup of milk (meaning hot)

use the milk to melt the sugar down by mixing them together
you must then let this cool alittle bit because you cannot melt the rest of the ingredients

8 tablespoons of shortening
1 teaspoon vanilla
1 cup of butter (margarine works if you have to use it but butter is better)

I think that is all of the stuff....
mix it well... and when I say well mix it forever... you will have it liquidy but then viola it will suddenly turn stiff for you... if for some reason it is not stiff enough... add a tablespoon of shortening at a time until it stiffens up... you will need to add alittle more vanilla if you have to add more shortening

this frosting is SUPER sweet and creamy if you melt the sugar the right way

No orange juice... but I do have sugar...
no shortening... damnit... Lizzy that sounded yummy!

But I DO have a food processor....

Dang, I might have to bake a cake and try some of these!

Another thing I've done is to cut the cake into cubes and soak them in a liquer -- a schnapps can work, or if you have it, Godiva chocolate liquer (something EVERYONE should have on hand!) or even Baileys. Lots of stuff besides rum to use ;) Then mix in some berries or fruit and you don't even miss the frosting!

Easy! Put sugar in food processor. Put in a nice blade and put it on high. Give it a few pulses until it's powdered.

:nana:

Instant confectioners sugar. Now you can mix it with butter to form a frosting. All you need is to flavor said frosting. What have you got that might work?

Do you have any jelly or preserves? Preferably either strawberry or raspberry?

I have strawberry jam... no raspberry...

putting sugar in a food processor makes it powdered?!?

HOW COOL! You are so Alton Brown :D

1 cup sugar
1 cup water
dash of Vanilla, dash of cinnamon....

Melt the sugar slowly in the water, careful not to boil. Add the vanilla and the cinnamon, pour the resulting glaze over the cake.

It's pretty good.

I have all sorts of extracts and those DaVinci Syrups (even have chocolate, I think...)

Yep. Should. I've done it--though I usually do it in that small "processor" that comes with a handblender.

Here's a butter cream frosting recipe:
1/2 cup unsalted butter, softened
4 cups powdered sugar
1/2 teaspoon salt
1/3 cup whole milk
1 teaspoon vanilla extract

Cream butter, add the rest...frosting.

Or spread a fairly thick layer of jelly over the top and drizzle chocolate syrup. Or sprinkle with cocoa powder. Or instant powdered sugar. ;)

If you want to make it chocolate icing, use 3 1/2 c powdered sugar and 1/4 c cocoa powder. The salt can be removed as well.

Easy chocolate frosting:

One cup of drinking chocolate powder (Like Quick)
A few drops of water
half a cup of butter

Blend all together and voilà :D

Super sweet and creamy chocolate frosting.

Woo Hoo!

I'm in chocolate heaven, now!

Damn, don't have any. I have cocoa... sweetened and unsweetened...

Same thing sweetie...but then add 1/3 cup of sugar to sweeten it.

ETA: that is if you use unsweetened cocoa powder.

Solid cocoa, or powdered?

That buttercream recipe can also be made richer by adding a couple of tablespoons of dark coffee, and adjusting the milk measurement. Which should be adjusted anyway - just enough milk to make it the right consistancy, never an exact measurement.

Tell us which one you finally put atop the cake...and how it turns out. Good thing about frosting, if you have enough butter and sugar, you can always try again and again until you find one you like.

<---putting cake in the oven now! :cathappy:
Never mind. :)

(was going to share a really creamy recipe for solid type chocolate)

Chocolate Sour Cream Icing

1 11.5 –ounce bag chocolate chips
¾ cup sour cream
1 cup confectioners’ sugar

In a microwave safe glass bowl, melt chocolate on 50% power for 2 minutes or until melted; stir until smooth. Whisk in sour cream and confectioners’ sugar. Fill and frost cooled cake. (Note: icing will not harden)
