Sounds like bloody good adventure story with some romance, as he falls for one of the ladies. Some non-con if they are stolen by bandits. Of course the reward of a reverse gang bang when they make it successfully. I like the idea.

Some subplot considerations:

Gunslinger's sister, displaced from the family, finds him and joins the caravan, since he can't very well turn her away to fend for herself. Turns out she likes the ladies and meanders her way through thier affections (to his dismay) along the journey.

During a supply stop in Kansas City (or Amarillo), a well-heeled entrepreneur siezes on his idea and attempts to recruit his harem into his own enterprise. Your gunslinger is in a panic, but the ladies see him coming and seduce the local guy's money out of him for thier collective benefit.

Native American tribes and related troubles: In the aftermath of some confrontation on the prairie, a young, beautiful Comanche woman ends up with them. She does't speak thier language, but knows a thing or two about intimacy. The gunslinger is smitten, and the ladies are jealous. She can evolve to have any number of roles amongst the group over time.

There is a very good three chapter story similar to that somewhere on this site. But good idea. I would say go for it
 
This reminds me of a "Cugel" story by Jack Vance, although that was set in a sort of medieval society in the far future. Cugel is sort of a lovable rapscallion type character, and he is hired by a monarch who is sending seventeen beautiful young virgins to a neighboring kingdom as a gift. Cugel gets himself hired as a bodyguard for the caravan. When the caravan arrives at its destination and the virgins are tested for "authenticity," it is found that only two of them are still virgins, and Cugel is arrested. Just more plot food for thought.
