Finishing up some baking for Christmas Eve and Christmas Morning...

Sausage Cheese Ball Muffins

Ingredients:
2 boxes Jif corn muffin mix
1 pound hot pork breakfast sausage
16 ounces sharp cheddar cheese, grated
1/2 cup grated parmesan cheese
2/3 cup whole milk
1 tablespoon Italian seasoning
2 eggs

Instructions:
1. Preheat oven to 350 F (177 C). Oil a nonstick muffin tin (I use melted coconut oil).
2. In a mixing bowl, combine all ingredients, put in fridge for 5-10 mins to setup, shape tightly into 2 inch balls. Place in muffin tin (1 per spot).
3. Bake until brown, approximately 20 mins. Best served warm.

Store cool in the fridge.

Reheat:
350 F (177 C) for 10 mins in the oven or using reheat feature on an air fryer.

Makes 2 dozen.
