My dad used to put shreds so you actually bit into a piece of carrot. Also, walnuts and crushed pineapple. It was completely different from a pumpkin cake. I understand that isn't usually the way carrot cake is made though.

Spice cake is pumpkin cake without pumpkin.

I love this course style cake. Super good. I will say I stop anymore with just cinnamon - not just with carrot cake but also if I am required to provide the orange pie. It's not that I dislike cloves or allspice but I keep hearing feedback, "oh this is "lighter" tasting" haha Sigh. I miss smoking cloves.

That's why they're ADULT decisions. Death is unavoidable. How I deal with life thrown at me is my decision. The question we have to answer inside ourselves is can I live with the consequences.
