Sauces, condiments, dressings, and fragrant oils

It occurs to me that there doesn't seem to be any post dedicated to new or interesting entrée or snack accompaniments. But the world is so much livelier than just ketchup.

I used to be into hot sauces but recently re-discovered fried chili oils. They improve any non-spicy savory dish by 200%. Throw some into a bowl of mashed potatoes or noodles, and you've just turned a bland bowl into a flavor bomb.

What other condiments, sauces, etc. have you found to be new or interesting, and what do you pair them with?

Depends on how you rate. If you rate by thumbs up, and a dish was previously three thumbs up, and now it's got a 9 thumbs up rating, then it was indeed a 200% improvement.
