I have never tried cooking with salmon, but I plan to soon. 🙂
Well, with the Lomi-lomi, you don't cook it. Take a salmon fillet, salt it, wrap it, put it in the refrigerator for 24 hours, take off the skin, and cut it into bite sized pieces. Chop up a good, fresh tomato --the best you can find-- a green onion, and a sweet onion. Put it all together, add salt and pepper, toss it with fresh squeezed lime juice. It is a side dish, and it is outstanding.

But grilling a nice piece of fresh salmon, with just salt and pepper, over cedar chips is one of the best meals I ever make. Simple, and amazing.
