I see you use stainless steel pans … I just bought a set and I’ve been pretty happy with them thus far … any tips? It’s my first time using stainless steel
Let chicken sit for a while before trying to flip. If it’s still sticking to the pan, it’s not ready to flip. It will release when it’s ready
 
Interesting… I do like cured meat. I’d try it. Is the peameal like cornmeal but peas?
I think historically it was ground peas the crust of which helped to keep flies off of the meat. Now it is cornmeal, which I imagine isn’t as gritty, so you don’t need to remove it.
