You could use honey instead of sugar. The original version was of course with honey, because sugar wasn't imported into Europe before renessaince. It was probably also with more alcohol. Today we use white and dark sugar usually.

And there are other versions too, of course. Like not using lemons but rhubarb. Or adding herbs. Maybe some day I'll get myself trying that.
I wonder if molasses would work too. The sugar content is high enough to ferment (it’s what Rum is made from) but I wonder how the flavor would be.

It would work. But most people don't like using just brown sugar (50/50 white and brown is the norm here). I have used even all brown - which is white sugar with some molasses.

So maybe start with 3/4 white and 1/4 molasses, and see what that turns out to be.
 
The rhubarb sounds awesome
I haven't ever really tried it. Mom did, when I was a kid. Some of the bottles (all glass at that time, event soda bottles were still all glass!) exploded, which made her realise it had become a bit stronger stuff! So it wasn't for kids, and dad didn't like it, so she drank it all over a few months.

It was a mystery why it turned out that way, but apparently beings more acidic instead of having more alcohol is common for the rhubarb version. Should be very refreshing.

Well the explosion was because it had brewed stronger than expected. That means no just more alcohol but also more bubbles = pressure!

Mead bottles are a bit like any sparkling wine: don't shake and open with care, they will try to sparkle all over. I use sturdy old lemonade bottles (they used thick plastic 20 years ago, easy to handle), they can take the pressure.
