I loosely follow this recipe but i add a lot more vegetables and beans. The recipe has good spice and sauce ratios so you get an idea of how much cocoa and fish sauce you need. Remember fish sauce is salty. I cook my veggies down a lot in a regular pot so they release some water and i reduce the chicken stock or just dont add stock at all to make up for the additional liquid from the vegetables.

Chocolate (added in the form of cocoa powder) just adds a layer of complexity to chili. You don't taste the chili and think, "Is there chocolate in this?".
