I'm so old I remember back when "Flat Iron Steak" was still plain old chewy "top blade steaK", but hell that was only about 10-15 years ago. :cool:

I think some of the cuts vary by location. I don’t find it chewy.
We don’t even get strip steak here.

Some keyboard warrior doesn't seem to know that shit-posting does not mean prolific, on topic posting. My posts are generally far to wordy to qualify for shit-posting status. Responding to multiple, actual shitposters, as BotanyBoy and I frequently do, tends to run up ones post count.

I also have only seen it as blade steak. (I had to look that up) I think chewy depends on the cut and the trim. Triming that sinew off makes it tender.

I get it from the butcher at the local market and there don’t seem to be many of them to a side of beef.

Thor has got me wondering about sous-vide. The problem is I've got a wide variety of kitchen Implements of Destruction most of which are mid-century to simply used. I like a vintage and novelty, and they don't seem to be showing up in thrift stores as of yet. I may have to break down and actually purchase something new, which pretty much goes against my entire philosophy about purchasing anything.

The bone in ribeye steak with pretty large so I've got a whole 'nother meal's worth put away. I deliberately sliced off part of it early, while it was still a little more rare than I want it to account for reheating.

I wonder how leftover steak would taste re-warmed by sous-vide?
 
I feel like I should know more about Butchery. I at one time thought flat iron and skirt steak for the same animal because they are cut with the grain. I think. Skirt steak sliced very very thin is very popular in my Barrio. I don't actually know what it is so I'm going to have to Google that as well.

I have just ordered up some steak aging wraps from The Sausage Maker. Will likely try a strip loin primal to age for 6 weeks and then turn it into steaks. Once trimmed, they can be individually frozen. And yes, the sous vide and either a pan sear or an extremely hot grill sear is the way to cook this.
 
Love skirt or flank steak cut into strips and marinaded. Olive oil, red wine, some Worcestershire sauce, green onion and garlic. Marinade for the day and then grill.
 
I understand the concept but I've never eaten a professionally aged steak because I always assume that they're out of my price range per calorie consumed. Probably should try it once.

The idea of aging a steak myself scares me.

As long as I get a good sear on the outer edges I have no problem eating a steak bloody as hell but the idea of deliberately letting it decompose seems scary.

How accurate do you have to be on things like temperature control and humidity to do that safely?

That would kill me, the histamine level would have been through the roof, I suspect sous vi would also be high histamine :(
 
The level of intrusiveness from search engines is pretty astonishing. I'm using Firefox which, theoretically, doesn't sell my information and I'm using DuckDuckGo which theoretically shouldn't be able to track me. Yet when I Googled dry aging wraps the very brand that Thor mention pops up on Amazon but it immediately on top of that suggests lower price items. In other words it just heard me talk about me being concerned about expenses and already anticipated the fact that I wasn't going to want to drop $23 for that.

I thnk it was my voice to text through my android that Bezos was able to buy from Google.

It's more like drying out.......

I got 3 tries with the wrap set. If it stinks, it will go to the garbage bin.

There's a steakhouse in the food court at the New York Casino in Vegas that has an awesome aged steak. Make a road trip for the meat.

Sous vide just makes the steak all the same temperature. Nothing is overcooked or undercooked.

Bezos wouldn't ship it to me in Alaska and said it needed 'special handling' so I bought it from the Sausage Maker proper.

Those lower priced bags are great for making rotten meat.

My general mindset is to make to with a cheap inferior product until you can comfortably buy the top of the line item. I can easily do so now l, but I don't wanna. Frugality is becoming ingrained. Also, I have no room for a King-size and it seems silly to get spendy on a full.

I'm toying with the idea of grabbing a vacuum sealed rolled up mattress at Walmart and calling it good for a while. This is clearly not adequate, and I could wrestle that home in the car. I guess I can have a local mattress outfit deliver but I don't want to do that sort of thing online because I don't want to leave a trail to my actual door.

I'm thinking about it trip to Vegas. Take The Offspring to Circus Circus. See the sights on the way maybe do the Grand Canyon railroad spend a little bit of time at the North Rim , then Vegas.
 
The first time I knocked a girl up I ended up spending about $1,200 for a new refrigerator because crushed ice helped with morning sickness and dropped about the same on a new mattress for better support.

Turned out to be a great investment because I now have couchs to sleep on in both the UK and the South of France as a direct result of that copulation.

We had worn the fuck out of the old mattress, anyway
