I recently came into possession of a shitload of top quality pork fillet. Never thought of doing a wellington.

Safeway sells them often for $5 a loin, so I have a few on hand at all times as well. Small enough to cook through, yet still get that nice golden flaky crust.

I follow this recipe for the most part.

The melt has started, and there will be flaking, and falling rock shards. I followed my inner urges, and gobbled four cheese mac. Just because it is not snow, does not mean there will be no ice.
 
I have been kicking around this Steel Cut Oats & Mushroom Risotto recipe for a few years, just not feeling it.

What was I waiting for!?! Scrump-Dilly-Icious!

Swapped out the arborio rice for steel cut oats, selection of wild mushrooms, fresh thyme, homemade stock, and some Parmigiano-Reggiano.

Served with turkey sausages, it had the perfect chew and a beautiful, creamy texture. Savoury, steamy sex in a bowl.
 
If you been kicking that recipe around for years, I wouldn't suggest eating it. Paper gets stale after a few years.
 
Jesus, it's like a kitten with a new ball of yarn. I hope the dull twat gets bored soon.
