Check for bugs but I've used mixes past the expiration date. Some turn out ok, others not. Its hit and miss.

It should be OK. The flavour may be less but it wont be harmful.
(I completed a food safety course years ago for my job)

Use by=unsafe after
Best before=may not taste same after use your own judgement.

i would use it... (do check for bugs or creatures in the mix)

You could get koala chlamydia. I'm pretty sure that's not how you get it, but it could happen and then you'd probably have a lot of explaining to do.
