Meatless Monday, and I was feeling lazy. I made some cheese grits, sauteed up some baby kale and spinach with some sliced cherry tomatoes, and poached an egg over the top. It was surprisingly satisfying.

I had leftover pot roast. So, I chopped it fine to make it seem like meatless Monday.....

You know... I'm not a vegetarian but sometimes I go weeks at a time without eating any meat and just don't notice. I outright 'meatless monday'ed today on accident.

Breakfast: Coffee and cigarettes

Lunch: Lunch Special #3 from the Mexican place which is 2 bean burritos, a cheese quesadilla, rice, and a salad, which I kinda just dump over the plate to make like a failure pile. And nachos. No sour cream because it's fucking gross.

Snack: Half a pound of animal crackers because I was strait up bored at work and a 2lb bag was $1. That's a lot of animal crackers for $1. Don't care who the fuck you are. And they tasted like old-school McDonaldland cookies. I didn't think they'd be any good because when you get that much shit food for that cheap, you know it's gonna be shit. But they were so good I called my gf to tell her how fucking good they were.

Dinner: I forgot to eat because BiteSize was being a bitch and I got pissed off and went outside to smoke/cool down because she's pissing me off with this not eating bullshit. I should eat something. There was food and I had every intention of eating it but I just totally didn't. And I forgot about it until just now. The gf made soup beans and corn bread and potatoes and a bunch of good shit. I bet the pot's still in the fridge. She made cole slaw too. She makes the best fucking cole slaw in the history of slaws. I HATE fucking mayo and this bitch tricked me into eating it with her deliciousness. Bitch.
 
Are we doing 'daily eats' now?

Breakfast..... various fruits cut up with quinoa porridge or a vegetable smoothie made with quinoa milk.

Lunch...... various veges cut up with pepper and chilli, a cup of home-made yoghurt, or a vege juice with added vita-greens.

Snack...... nuts, grapes.

Dinner..... usually either curry or fish, with seasnal veg and lentils/quinoa/beans.

During the day I also take ..... fish oil, lysine, spirulina, vit B cmplex, milk thistle, kelp, celery seed and.glucosamine. And a high-dose probiotic with every meal.
 
I made ricotta and spinach raviolis for dinner tonight. About a year ago I got this ravioli form from eBay (someone had the gall to bid against me and I really showed them!!!) and just now got around to using it.

I neglected to take photos though.

Speaking of avocados (there, there, gsgs), I got a great present for Christmas.
It has been on my Amazon wishlist for a few months and someone got it for me unexpectedly. I'm not a kitchen gadget person at all; no extra room, no desire to noodle with a million different tools.

But. This thing. I am in love! Every single bit of it works as it's supposed to.

Just crush a clove of garlic into paste with the back of your knife and salt, add to avocado that you simply smash with a fork and put maybe a teaspoon of lime juice. I like minced cilantro in it. Others add fine minced, seeded tomato, and/or minced onion.

It seems to me that limes and lemons used to be the same size. Now limes are the size of a golf ball. What gives?

I add way more lime, but I also usually make guacamole with 3 avacados at a time. Also, cumin, jalapeño, salt and pepper.

I love cilantro and it's amazing to me that some people can't stand the taste. Such great flavor for some and soap for others. Taste buds are weird.

I wonder that too. They also taste different. I suspect someone crossed key limes with Mexican limes. To get more in a crate? To slice and fit in the dos equis better? Dunno.
 
Oh and sometimes if I'm being lazy I just throw everything in the find processor and just pulse. It's nice if you're making a larger batch.

Hmm. I dunno about cumin. I'll try it. Usually I use cumin sparingly with more chilli powder than cumin or it tastes like taco meat to me.

If I wanted some heat in Guacamole I'd go with chile tepin. Usually though, guac is what i use as a cooling side to something really spicy already.

Who am I kidding? I will eat it out of the bowl with a spoon. My first shopping trip on my own I bought myself 8 avocados, because they were on sale and the food of the gods.

For not-date-night Guac with some kick 3 cloves of crushed garlic per avocado. Almost like a southwest baba ganoush.

Around here we're boring hoors for traditional: avocados, extra lime juice, salt, pepper, garlic powder (our ratio is typically one avocado to half a lime, sometimes more lime).
I forgot I have some avos in the fridge. I was planning on taquitos at some point. I think there's guac in our future.

I've had guac with bacon before, it was pretty tasty.
