Geez I almost forgot. I also have about 2 pounds of 10/20 scallops.

Tinfoil packet pasta
Heat oil in a big pan and throw some chopped garlic and chili in. If the shrimp are raw put them in too.
Then add a can of tomatoes, a glass of white wine and the scallops. Salt to taste.
Cook for about ten minutes. If the shrimp are cooked put them in after this.

Boil the pasta half ready, mix it with the sauce and put it in at tinfoil packet in some kind of ovenware.
Cook for 8 minutes at 225 degrees celcius.
Open the packet at the table and serve directly from the tin foil packet because the smell is divine when you open it.
 
There is a restaurant in town that makes the best sandwiches, and I recreated one today. Toasted French baguette, horseradish sauce, caramelized onions, roast beef, cucumber, cilantro. Tan delicioso :D
And "what's in the fridge" soup. Good, but definitely not the star!
 
I made my chicken enchilada casserole last night. It's relatively easy, very tasty, and I make enough so that we have leftovers (which are equally good). The fun thing is, it keeps evolving. It started out as a simple unstructured enchilada (no rolling, etc). The kids dubbed it Mexican lasagna. :) I keep adding ingredients or trying different seasonings.

I am making these using splenda instead of sugar, they look normal and I'll know in 90 minutes if they worked out. My mom has diabetes and whatever way to reduce the sugar or replace it helps...so....

Chili and coffee rubbed steak, oven roasted lemon pepper broccoli and red skinned garlic smashed potatoes.

Dessert will be spiked real nog and oven warm oatmeal cranberry cookies.
 
Farmer's Market omelette of sweet French peppers, chard, baby bella mushrooms, green onion and Butterkase cheese, pea shoots with mixed greens and super sweet cherub tomatoes, herbed rosemary bread, toasted, sausage links, and chocolate hazlenut coffee. Too bad I have no Champaign :(
 
Pollo al limone and pasta.
We haven't had that for years and I have absolutely no idea why that recipe dropped out of rotation because it tastes great and it's easy to make.

I haven't made that in a long time either... Not sure I know how to make it now. Will have to google a recipe and see if I remember what I used to do.

I use chicken breast and shallots, fry them lightly in a pan, sprinkle with a bit of flour and then let it simmer in white wine, chicken stock, cream and lemonjuice with thyme and basil.
I somtimes use what leftover vegetables I have, like bell pepper, carrot and sometimes mushrooms, but only a little. The chicken and lemonflavoured cream are supposed to be att center stage.

That is what I recall doing. I never used cream, that is for sure.
 
Homemade pizza...mostly. Thin crust pre-made that I am adding extras onto...when you live out in the country sometimes you need to get creative with your meals!

Black olives, pineapple, ham, feta. YUM! LOL. And of course bacon (ha ha). Should be great!

By Request ...here is the Candycane Kiss recipe. I substituted the sugar with splenda as my mom has diabetes and it worked out just fine. The candycanes added sugar but the majority is the meringue. These are fantastic. VERY tastey and light ...melt on your tongue YUM!

INGREDIENTS

2 egg whites
1/8 tsp salt
1/8 tsp cream of tartar
1/2 cup of sugar (I use super fine)
1 tsp vanilla
2 peppermint candy canes, crushed, to mix in batter (I use the ones that are red and green)
1 peppermint candy cane, crushed, to sprinkle on top of each kiss

DIRECTIONS
In a mixing bowl, beat egg whites until foamy. Add salt and cream of tartar, beat until soft peaks form (do not underbeat!). Add vanilla and beat in sugar, 1 tablespoon at a time, until stiff and glossy. Add crushed candy canes to batter, fold in gently.

Recipe says to put into a pastry bag or a plastic bag with hole cut into corner and squeeze onto tray, but I drop from a teaspoon, forming same shape without mess of a bag. Place on ungreased foil lined baking sheets. Sprinkle crushed candy cane lightly on top of each kiss.

Bake at 225 for 1-1/2 to 2 hours until dry but not brown. Cool, remove from foil. Store in airtight container. These freeze nicely, too.

WARNING!!!! They are addictive!

I took the day off to cook a good bye brunch and hang out with my dear friend before she moves really far away and it is unlikely I will be able to see her for a few years. *sniff*

Spice cake with orange glaze, veggie and goat cheese frittata, applewood bacon, and a fruit salad of pineapple, blackberry and raspberry.

You will have to look forward to the time when you can cook this exact same meal for her again :)

Tonight it will be lemon pepper salmon, rosemary quinoa with red onions and mushrooms, brussel sprouts and butter beans.
