I make a chilli with nothing but beans and lentils (no meat).
Everybody loves it - even my self confessed meat-a-holic son!
But I also make chilli with meat and no beans..... it just depends on my mood on the day.

Add some powdered mushrooms, soy, and ground barley and it tastes meaty.

Terlingua hosts 2 annual, world-renown championship Chili competitions that I know of...

...and neither permit beans.

The "Original Terlingua International Frank X. Tolbert - Wick Fowler Memorial Championship" is the other...

...and, believe it or not, both Championship competitions are held on the same day and within 9 miles or each other in the Chihuahua Desert, in the middle of literally nowhere.

I have tried. Really tried. But soy, and almost all things soy, make me want to chuck.
Except soy sauce.

I also don't use chilli powder in mine. I prefer to use actual chillies that I mince up in my mortar/pestle bowl.
I think the flavour is better using fresh.
