Gushing and squirting are the same thing. Liquid accumulates inside the vagina, then comes out due to a combinations of muscles contractions and gravity, also complicated by whether a penis or toy is blocking the flow. Squirting is when a lot of liquid is forced out under high pressure through a very small space. Gushing is when the same liquid come out a bit less violently because the force is lower and/or the opening is larger and/or less liquid is building up in between muscle contractions.

I guess I implied the answer rather than stating it outright - gushing happens naturally, anyone who gushes can manipulate the situation to turn it into a squirt but it's kind of artificial and distracting for the woman doing so. So in your words "it's really more like gushing" unless coincidence or artifice creates a situation where gushing presents as more forceful squirting.
