The only good cooking tip I've ever given is when I told my old roommate that you don't just put the Ramen in the microwave for 3 minutes, you do two rounds in the microwave for 3 minutes.

I use both the juice and the pineapple from a can. I freeze what I don't use(if the munchkins don't eat it all!) to use next time.
Fresh pineapple would work too. The more juice you use, the more moist the cake or cookies turn out.

Works for me. Just don't let it clarify or you have to start all over again. Heat it at a very low temp. All you need is for it to be soft enough to mix with the batter.
