Jerk Sauce Recipe

This is the sauce I make quite often.

1/2 cup ground Allspice Berries
1/2 cup packed Brown Sugar
6-8 Garlic Cloves, skinned
4-6 Scotch Bonnet Peppers, (Habenero's) seeded and cored. *
1 Tablespoon ground Thyme, or 2 Tablespoons Thyme Leaves
2 bunches Green Onions **
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
2 Tablespoons Soy Sauce
1/4 cup Pick-A-Peppa Sauce

Place all ingredients in a food processor and blend until smooth. This will keep a long time in the fridge.

* If you are planning on using this with a person who has a sensitive stomach you can substitue the Jalapeno's for the Scotch Bonnets. (If you do this use at least half a dozen Jalapeno's.)

** If you don't have Green Onions you can substitute by using a whole sharp Onion.

Do you know a recipe for Skye (I think) sauce, Cat? When I had jerk in Montego, there was a dirty brown very watery sauce that you poured over the meat on your plate. it was so amazingly savory, and I've never seen it since.

I haven't heard of it so I'll have to talk with a couple of people I work with who are Jamaican and ask them about it.

Is this the sauce you're planning on using to cure the loud neighbor of his deafness? :p

Ahh hell no. It's not nasty enough.

Maybe some nice, well ground, raw Horseradish?

Actually if I want to be nasty with someone using food I have a vac. bag in my freezer filled with Naga Jolokia Chili's. (I plan to grow some.) Take one or two of these and puree then add to a bottle of Hot Sauce, or marinate something in the puree and watch the fun begin.
