Looks long, but isnt too bad!

Sure honey...tis easy... Of course i've changed the recipe over the years to a healthier version so this is what I do now.

Mine:

I've adapted it too, taken out some veg we dont like (eg. celery- shudder)

this is for 4 people who eat a lot mind:

Chop 2 medium onions (not too fine, not too huge)

2 cloves of garlic

4 leeks chopped like the onions

4 carrots peeled and cut into discs the width of 2 x £1 coin

1 large red pepper and 1 large yellow pepper- reasonably chunky

1 and a half tins of tomato juiced

2 litres of boiled water

4 vegetable stock cubes

2 bay leaves

1 handful of pasta (shapes not spaghetti) per 2 persons


Heat oil in large non stick cooking pot

Chuck in onions and garlic and fry for 5 minutes

Add in carrots and leek, fry for 15 minutes

add in tomatoes, water, 1 tsp salt, half tsp of chilli powder and crumble stock cubes in too.

Bring to boil, add 2 bay leaves and mixed herbs and submerge.

Simmer for 40 minutes

(ETA) add peppers, add pasta, add water if neccesary for pasta to cook.

(eta) Bring to boil then onto a medium heat- Takes about 20 mins for pasta to cook

Add salt, pepper and herbs to taste.

(eta) REMOVE BAY LEAVES BEFORE SERVING.

Ciabatta- store bought (sainsbury's do the best ones- we get the twin pack- one is plain the other has aegean tomatoes in it or something like that)

slice down the middle (as if making a sandwich)

'Tear' strips all down its length, layer into an overproof lasagne dish or something (you'll need 2 dishes if you do 2 ciabatta's like we do)

pour 250ml of olive oil into a bowl, add half a jar of SUNDRIED tomatoes (chop them) 1 stp of salt, half tsp of herbs and a little cracked black pepper.

Mix, and mush up this mixture, then use an oil brush to coat each slice of bread, then sprinkle on the chopped tomatoes, and shove in the oven for 20- 30 minutes, just until they crisp up nicely.


(i know it seems long, but trust me, cutting the veg is the longest part- whilst its simmering etc, you can chill :))

Sounds yummy...and chopping vegetables does not bother me which is why I have a child that will hardly tolerate most canned foods other than veggies. She likes fresh food so I make fresh food.

bad part of that is like on vacation she would not eat the spaghetti until they brought her Parmesan cheese :eek::D And even then she looked a bit put out that it wasn't grated fresh but at least she ate it!
 
Why does my left leg always lose circulation on a Tuesday? It isn't every Tuesday, but every time it happens is a Tuesday at around 3:00pm to 4:00 pm. I don't get it, and it is quite annoying.

*gets up and walks around for a bit*
 
-sigh- So...was supposed to get a prescription for new glasses today. Instead, I was informed that there is some clouding in the capsule behind the lens...so I may be having surgery on my eye for the 3rd time, a few months from now.
 
He said it he said it he said it I can't believe he fucking said it!!!! I've never been SO FUCKING ANGRY with anybody in my life!!! :mad::mad::mad:

Thanks...I'd rather he lied to me about this because I'd never find out. I'm of a mind to go see him tomorrow for the sole purpose of putting my fist through his skull. The jackass voted with his dick and not his brain. *banging head on brick wall*

**Note: No I'm NOT talking about my husband, thank god.
 
So... last day of the work week, tomorrow morning is a flu shot and meeting someone from online. I'm not sure which one I'm more nervous for.

cook 1lb diced chicken or turkey (okay i grabbed the wrong pack at the store but it is still yummy)...put aside

2 medium leeks and one small onion diced and 1 tbsp butter ... saute in large pot until leeks and onions are translucent.

Add 3-4 large potatoes diced. Saute for a few minutes and till potatoes are warm.

Add 2 tbsp of concentrated liquid chicken stock.

Cover with boiling water, just enough to cover potatoes.

Cook until potatoes are done.

Add 1 tbsp of dried rosemary and continue to cook another 10 minutes.

Crush part of the potatoes to make the sauce thicker and add more boiling water if it gets to thick.

Serve with rolls or garlic bread.
