Something else that I enjoy... and have been having lots of recently is home-made buscuits & Gravy... MMMMM...

Had lots of crappy versions in the Army, but now that I can cook it myself, it's so damned easy to do... and so tasty.

So what is your recipe?

Mine is:

3/4 pound Hot Breakfast Sausage
2 Tablespoons Butter
3 Tablespoons Flour
4 cups Milk
1 cup Heavy Cream
1 1/2 Teaspoon Salt
1 1/2 Teaspoon Pepper
1/4 cup Grated Garlic
1/4 cup Grated Onion
2 Tablespoons Bacon Grease

Fry Sausage and crumble it. When it is done add the butter, Bacon Grease, Flour, Pepper and Garlic. Cook until it is well mixed and the Flour has seemingly vanished. Add Salt, Onion, Milk and Cream. Mix well then slowly increase the heat while mixing continously. Simmer over medium high heat while mixing until it has thickened to the consistancy you want.

Bread spread with butter then Golden Syrup topped with Cornish Clotted Cream.

Bread and Dripping frosted with granulated sugar.

Slices of cold roast beef slathered with full-strength Colman's Mustard and washed down with pints of bitter.

Hummus with roasted garlic is a major comfort food for me.
Spaghetti with the parmesan cheese from the green shaker jar.
Sauerkraut.
Fried green cabbage.
Baked potatoes.
Popcorn.
Tomato soup with crushed saltines forming soggy little islands.
Long-cooked green beans with potatoes. The kind that get dark olive green and melt-in-your-mouth tender.

Pancakes with sugar and vinegar.

Apple pie (and jam sandwiches) with cheddar cheese.

Tomatoes on fried bread.

Home made plate meat pies with shortcrust pastry (mince everything with extra onions and some dry bread, then re-mix and slap onto the bottom crust).

My late grandmother, a farmers wife used to give us whipped fresh cream on our breakfast bacon, with a bit of black pepper, it's delicious.

My own favourite is faggots with mushy peas and mashed potato.
 
Oh yes, I forgot toast and dripping: meat grease melting on hot bread. Yummy!
 
I just remembered . . . marrow on crackers! Oh dear Lord, that is some good stuff. Makes me want to rush out to the store and buy a collection of beef shanks and make up a huge kettle of soup just to have the marrow.

A camp food we often had was Marrow on Bisquits.

Most of the people I mention this too who haven't tried it turn a nice shade of green.

Hoooo . . . kay! I just upped the soup kettle to five gallons. And I ordered three loaves of sourdough bread to spread the marrow on.


Ever been to South Africa? There's a barbecue joint in Jo'berg that serves marrow bones as an appetizer. Mmmmmmm . . . mmm!

Never been to South Africa.

When I lived in Mass. I used to smoke Herring for myself and my parents. One year I smoked plenty of them and my mother decided to play. She shredded/crushed the meat then mixed it with some Mayo and Hot Sauce. She brought some over and I spread a bit of it on crackers. Damn that was good.

Another comfort food for me is something called Speck. This is a chunk of boned leg meat from a pig. It is seasoned with salt and Garlic them slow smoked. Very lean and tough as hell it tastes absolutly incredible.
